On Friday 27 June 2014, award-winning Executive Chef Kevin Joseph from The Oyster Boxin KwaZulu-Natal will return to sister property The Twelve Apostles Hotel and Spa for one night only, to cook up a storm for Cape Town residents and hotel guests. This year his four-course Indian feast will be accompanied by a fine selection of wines from Stellekaya, a privately-owned boutique winery situated in the heart of Stellenbosch, and served in the breathtaking seaside setting of The Twelve Apostles’ fine dining restaurant Azure.

Prior to joining The Oyster Box 10 years ago, Kevin Joseph accumulated a wealth of hands-on experience at leading hotels around the world, including the Raffles Hotel in Singapore and Claridge’s Hotel and Tamarind Restaurant in London.  He also spent time in various other hotels within the Red Carnation Hotel Collection in the UK and South Africa. Chef Joseph describes his cooking style as 'classic with a twist of modern' and says he believes in fresh, locally sourced ingredients and generous portions! He is the current chairman of the Chaîne des Rôtisseurs, KwaZulu-Natal (KZN) branch and was recently awarded a prestigious Blazon by the Chaîne.

Kevin Joseph’s dishes will be paired with wines from Stellekaya. The winery produces a collection of red wines that typify the Stellenbosch terroir, with all grapes sourced from its farm and surrounding producers in the region.

The special evening takes off with Masala seared tuna loin, saffron butter poached langoustine, chilli infused avocado puree and peanut and coriander dressing. A vegetarian variation of the dish features Tikka scented paneer and turmeric potato cake, also served with chilli infused avocado puree and peanut and coriander dressing. These mouth-watering starters will be matched with Stellekaya’s Cape Cross 2009.

Chef Joseph follows this with a vegetarian second course - Coconut, potato and spinach soup with crispy fried green banana, pudina leaves and caraway crouton. The exotic flavours of the dish are set to be further enhanced by Stellekaya’s Pinot Noir 2012. Chilled falooda panna cotta is then served as a sorbet, before proceedings move on to the main course - Savoury Indian spice rubbed confit of duck, presented with tandoori mango and cauliflower puree, Aloo Baingan (baked potato and aubergine), carrot and zucchini lattice, saffron and almond cream. Vegetarian guests meanwhile may enjoy Fried masala spiced risotto in lieu of the duck. The flavour explosion will be supported by Stellekaya’s Merlot 2008.

The evening finishes with a sweet flourish, thanks to a dessert of Gulab Jamun (fried dumplings), with mildly sweetened yoghurt sprinkled with toasted pistachios, zesty mango salsa and Chai tea ice cream. This final course is served with Stellekaya Grappa as a digestive.
