Superb Chardonnay
paired to perfection with Executive Chef Darren Badenhorst’s signature dishes
takes centre stage onFriday, 17 April at the first Wine & Dine
Collaboration dinner for 2015 at Grande Provence Heritage Wine Estate in
Franschhoek.
Featuring fellow
producers Lismore Estate Vineyards, Jordan Wine Estate and De Wetshof Estate,
the evening hosted by Grande Provence winemaker Karl Lambour is a showcase of
some of the Cape’s finest Chardonnays.
First up in the food
pairing stakes is Grande Provence Chardonnay 2013 served with Darren’s Ocean
risotto of textured soft shell crab, turmeric confit patagonica, barrel smoked
langoustine and white mussels with a mist of saffron bouillabaisse and West
Coast seaweed brittle. Next up is the De Wetshof Bateleur Chardonnay 2012 with
a 62 degree farm egg drizzled with foraged mushroom jus in a forest nest with
pine and zinfandel smoke.
For the Jordan Nine
Yards 2013 Darren is serving his white sea bass with Cajun spiced soft shell
crab and ocean and land asparagus. Lismore Chardonnay 2012 brings the evening
to a close with a dessert of local honey bavarois enriched with a spiced honey
pot, hazelnut meringue, wild rose apple, almonds and vanilla crumble.
The
Chardonnay Wine & Dine Collaboration dinner takes place at The Restaurant
