Shannon Vineyards Sanctuary Peak Elgin Sauvignon Blanc 2010 88 Points


Clear, day bright, pale straw with slight green reflection, medium concentration and medium plus viscosity, evidence of CO2 gas, no sediment.

Clean, medium plus intensity with notes of ripe gold kiwi, gooseberry and lime, grassy layers with white clay minerals, faint brush of wood, complex and layered.

Dry, medium plus acidity,medium alcohol, new flavours of ripe Granny Smith apples, crunchy style with a certain tighness in structure, medium lenght and medium complexity, with some phenolic richness, now until 2017, tense, minerally driven, different in a positive way to previous vintages, need food to express it's best.

Served at 10 degrees celsius with a Cantonese style sweet and sour white fish fillet, ginger and carrots.
