One of South Africa’s finest Sauvignon Blanc with
an impressive track records, over the past 10 years Iona Sauvignon have shown
they can aged very well (I experienced a vertical of all their vintages, a
while back, to substantiate this observations) with bottle age they do not even
take on the pungent asparagus and unripe green pepper note of way too many Cape
Sauvignon as they start to age (some even a year after bottling), I reckoned
this is greatly due to their impressively low Ph, very low by industry average,
giving their sauvignon clarity and fruit brightness as well as the structure to
age.
