AMARULA GIVES A NOTE OF AFRICAN ORIGINALITY TO FIRST TASTE OF CHRISTMAS IN GAUTENG

Amarula will be showcasing its stunning range of gifting at the very first Taste of Christmas festive gifting, food and drink event which takes place from December 7 to 9 at the Coca-Cola Dome in Johannesburg.

The brand’s festive gift range includes a lantern pack that comes with a 750 ml bottle of Amarula, selling for around R140. Pick up a bottle, savour the taste and keep some aside to turn an old classic recipe into an African Original this festive season.  Recipe as follows:

Amarula crab/fish and shrimp Ritz salad

Ingredients
2 large egg ­yolks
1 tsp Dijon ­mustard
125 ml vegetable ­oil
Dash of Tabasco ­sauce
2 Tbs ­Amarula
2 Tbs brandy, such as Van Ryn’s 10 Year Old Vintage brandy
2 Tbs ­tomato sauce
Juice of ½ ­lemon
¼ tsp salt
1/8 tsp freshly ground black pepper
400 g cooked and cleaned shrimp
2 large ­avocados
1 head of iceberg ­lettuce
1 tin cooked crab or fish
¼ teaspoon paprika, for ­garnishing

Method
Amarula cocktail sauce
Place the egg yolks and mustard in a mixing bowl and beat with a whisk. Gradually add the oil to the mixture, constantly whisking until it emulsifies to the consistency of mayonnaise. Add the Amarula, a dash of Tabasco sauce, brandy, tomato sauce, lemon juice, salt, pepper, and mix well. Set aside.

Crab/fish and prawns
Cut the cooked and cleaned shrimp into cubes.  Remove the crab/fish from the tin and drain. Combine the prawns and crab/fish with the Amarula cocktail sauce in a large bowl and mix well.  Set aside.

Halve the avocados, remove the pits, but don’t peel. Place equal amounts of the shrimp and crab/fish, already mixed with the Amarula cocktail sauce, in the pit hollows of the avocado halves, filling them and creating ­mounds. Arrange beds of iceberg lettuce leaves on salad plates and place a stuffed avocado half on each and serve.
